Top o' the mornin' to ya CAL members,
Our general meeting today was wonderful. I was delighted to see so many of you.
Today our luncheon ladies chose their entrée and paid for their seat. We currently have 50 ladies signed-up to attend. If you have decided you would like to attend, email me at lin_zinn@hotmail.com and I'll put your name on my waiting list. The luncheon is at Trinity at City Beach, on April 15, at 11:00 a.m.
For those ladies who were unable to attend today's meeting and you are on my attendee list, the information will be in the backroom of Bizarre Bazaar. Please only write a check at this time. Our money envelope is not secure.
In honor of St. Patrick's Day, I would like to share with you a delicious dessert recipe. I have to give WW the credit for this recipe.
Mini Key Lime Cheesecake
1/3 c. graham crackers, crushed
1/3 cup sugar
1 tsp. melted butter
1 large egg
1 pinch of salt
2 1/2 tsp. lime fresh lime juice
4 oz. of cream cheese
2 tsp. lime zest
6 T. plain Greek yogurt
6 T. light whipping cream and lime zest for topping
Preheat oven to 325 degrees. Line a muffin tin with 6 paper liners.
In a small bowl, mix graham crackers, melted butter and salt. Evenly divide the mixture in the cupcake liners. Press down lightly. Bake for 5 minutes.
While crusts are baking, beat together cream cheese, yogurt, sugar, egg, lime juice and lime zest.
Bake 20 minutes or until set. Cool for 1 hour. Serve with whipped topping and lime zest.
